Roasted Tomato and Basil Pasta Sauce

Roasted Tomato and Basil Pasta Sauce 

Serves 6-8

Ingredients

  • 50-60 cherry tomatoes (I used red + orange!)
  • 1/2 c olive oil
  • 4 T. minced garlic
  • 1 tsp. salt
  • 2 tsp. ground pepper
  • 2 tsp. dried oregano
  • 2 tsp. dried cilantro
  • 15-20 fresh basil leaves
  • 1 tsp. red pepper flakes

Recipe

  1. Pre-heat oven to 415F.
  2. Make 'X-shaped" cuts into each tomato and place in large bowl.
  3. Add 1/4 c olive oil, 2 T. minced garlic, 1 tsp salt, 1 tsp ground pepper, 2 tsp dried oregano, 2 tsp dried cilantro, and 1 tsp red pepper flakes to bowl. Mix evenly.
  4. Pour evenly onto baking sheet.
  5. Roast for 30 minutes.
  6. After roasting tomatoes, add basil leaves, 1/2 c olive oil, 2 T. minced garlic, 1 tsp ground pepper, and tomatoes to blender.
  7. DO NOT BLEND - wait 20-30 minutes for tomatoes to cool.
  8. After tomatoes have cooled, blend for 30 seconds.
  9. Pour over your favorite pasta, and enjoy!
