Roasted Tomato and Basil Pasta Sauce

Ingredients

50-60 cherry tomatoes (I used red + orange!)

1/2 c olive oil

4 T. minced garlic

1 tsp. salt
-
2 tsp. ground pepper
-
2 tsp. dried oregano
-
2 tsp. dried cilantro

15-20 fresh basil leaves

1 tsp. red pepper flakes
Recipe
- Pre-heat oven to 415F.

Make 'X-shaped" cuts into each tomato and place in large bowl.

Add 1/4 c olive oil, 2 T. minced garlic, 1 tsp salt, 1 tsp ground pepper, 2 tsp dried oregano, 2 tsp dried cilantro, and 1 tsp red pepper flakes to bowl. Mix evenly.

Pour evenly onto baking sheet.

Roast for 30 minutes.

After roasting tomatoes, add basil leaves, 1/2 c olive oil, 2 T. minced garlic, 1 tsp ground pepper, and tomatoes to blender.

DO NOT BLEND - wait 20-30 minutes for tomatoes to cool.

After tomatoes have cooled, blend for 30 seconds.

Pour over your favorite pasta, and enjoy!
