Random Pantry Taco Soup

Ingredients

  • 5 chicken breasts
  • 2 packets of Taco Seasoning
  • 32 oz. chicken broth
  • 1/2 cup dry lentils
  • 1 can black beans
  • 1 can golden corn
  • 2 cans diced tomato and chilies
  • 2 cans petite diced tomatoes
  • 2 cans tomato sauce
  • 1 package frozen pepper and onion
  • 1/2 red onion (chopped)
  • 1 jalapeno (chopped)
  • 1/4 cup red pepper flakes
  • 1/8 cup dried cilantro
  • 1/8 cup ground black pepper
  • Sprinkle of salt (omit if on reduced-sodium diet)
  • 1/2 cup hot sauce

Optional: slice fresh jalapeno for garnish, add shredded cheese and/or corn chips!

 

Recipe

  1. Place chicken breasts in crockpot.
  2. Pour chicken broth, lentils, and one packet of taco seasoning over chicken and let cook on high for 2 hours.
  3. Take two forks and shred cooked chicken.
  4. Open can of black beans and rinse with strainer. Once rinsed, pour into crockpot.
  5. Add frozen peppers and onions.
  6. Add second packet of taco seasoning and cans with liquid.
  7. Chop red onion and jalapeno and add to soup.
  8. Add herbs + spices, then add hot sauce. Stir and let cook on high another 2 hours.
  9. After two hours, place soup on low for an additional 2-4 hours.
  10. Top with a sprinkle of shredded cheese, fresh jalapeno, and/or corn chips.
