Viral Green Goddess Salad 

Serves 10-12

  • 1/2 head of green cabbage 
  • 3 medium/large cucumbers 
  • 1 bundle of green onions 


  • 1 cup spinach 
  • 1 cup fresh basil 
  • 2 garlic cloves 
  • 1-2 small shallots 
  • 3 lemons juiced 
  • 1/3 cup olive oil 
  • 1/4 cup cashews (or other nut!) 
  • 1/3 cup Parmesan cheese 
  • 1 tbsp rice vinegar 
  • 1 tsp salt
  • Your choice of tortilla chips (for serving) 


  1. Chop cabbage, cucumbers, and onions, and place into serving bowl. 
  2. Throw all ingredients for dressing into blender and blend until smooth. 
  3. Pour dressing over serving bowl with chopped veggies. 
  4. Use tortilla chips to serve!
