Pepperoni Pasta Salad

Ingredients
1 head of lettuce

1 box-gluten- free rotini pasta
-
1 c fat-free Italian Dressing
-
¼ c regular Italian Dressing

1 c cherry tomatoes
-
1 cucumber
-
2 green onions
-
1 green bell pepper
-
1 yellow bell pepper
-
1 c low-fat mozzarella pearls
-
1/4 c Parmesan cheese
-
8 oz. turkey pepperoni
Optional:

1 tsp ground pepper
-
1 tsp dried cilantro
-
1 tsp dried oregano
-
½ tsp red pepper flakes
-
½ tsp garlic powder
-
½ tsp dried basil
Recipe

Bring 1 quart water to boil. Follow pasta box directions.

While your pasta is cooking, chop your tomatoes, cucumber, bell peppers, and onions into small, bite-size pieces. Place in bowl/dish.

Chop turkey pepperoni into bite-size pieces. Add to dish.

Add mozzarella and Parmesan to dish.

Once pasta has cooked through, rinse, drain, and place in separate bowl. Keep in refrigerator for 30-60 minutes.

Once pasta has cooled, add pasta to dish of vegetables + cheese.

Add your fat-free + regular dressing to dish. Mix thoroughly.

Optional: Add herbs and spices. To stay heart healthy, do not add additional salt!
