Pepperoni Pasta Salad

1 head of lettuce
  • 1 box-gluten- free rotini pasta
  • 1 c fat-free Italian Dressing
  • ¼ c regular Italian Dressing
  • 1 c cherry tomatoes
  • 1 cucumber
  • 2 green onions
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 c low-fat mozzarella pearls
  • 1/4 c Parmesan cheese
  • 8 oz. turkey pepperoni
  • 1 tsp ground pepper
  • 1 tsp dried cilantro
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • ½ tsp garlic powder
  • ½ tsp dried basil


  1. Bring 1 quart water to boil. Follow pasta box directions.
  2. While your pasta is cooking, chop your tomatoes, cucumber, bell peppers, and onions into small, bite-size pieces. Place in bowl/dish.
  3. Chop turkey pepperoni into bite-size pieces. Add to dish.
  4. Add mozzarella and Parmesan to dish.
  5. Once pasta has cooked through, rinse, drain, and place in separate bowl. Keep in refrigerator for 30-60 minutes.
  6. Once pasta has cooled, add pasta to dish of vegetables + cheese.
  7. Add your fat-free + regular dressing to dish. Mix thoroughly.
  8. Optional: Add herbs and spices. To stay heart healthy, do not add additional salt!
