Chickpea Blondie

Chickpea Blondie

  • 1 can chickpeas, drained and rinsed very well
  • ½ cup peanut butter
  • 3 T. honey
  • 2 T. packed brown sugar
  • 1 tsp. vanilla
  • ¼ tsp. baking powder
  • ¼ tsp. baking soda
  • 1/3 cup chocolate chips


      1. Preheat oven to 350F.
      2. Generously spray an 8X8 inch square pan with nonstick cooking spray.
      3. Add half of the drained and rinsed chickpeas to the food processor and process until smooth.
      4. Once smooth, add the remaining chickpeas and ingredients EXCEPT chocolate chips. Process until smooth and well combined. If needed, use a spoon to scrap the sides to combine all ingredients.
      5. Fold chocolate chips into batter and then pour into greased pan. Use a spoon to press evenly into pan.
      6. Bake for 20 minutes, or until edges are golden brown and fork inserted into batter comes out clean.
      7. Let cool for 20 minutes, then cut into 9 pieces.
