  • 5 oz chicken breast
  • 1 c sweet potatoes 
  • 1 c potatoes  
  • 1 c broccoli 
  • 1/4 c chopped romaine


  • Garlic salt - to your liking
  • Pepper - to your liking
  • Your favorite shredded cheese 
  • Your favorite dressing 
  • Fresh jalapeño 
  • Corn chips 
  1. Preheat oven to 425 degrees F. 
  2. Prepare the chicken however you please! I like to season with salt, pepper, garlic powder, onion powder, and red pepper flakes. 
  3. Place in oven for 20 minutes or until interval temperature reaches 165 degrees Fahrenheit. 
  4. While chicken is cooking, wash and chop your sweet potato, potato, and broccoli.
  5. Lay veggies on a baking sheet coated with non stick spray. Season with garlic salt and pepper and bake for 25-30 minutes. Broil for 2-3 minutes at the end of bake if you’d like a little more crisp on the potatoes. 
  6. Wash, dry and chop ¼ cup of lettuce and set at the bottom of a medium sized bowl. 
  7. Once chicken and veggies are cooked, add to bowl of lettuce. 
  8. Top with your favorite toppings and enjoy!
